French Cuisine From the Heart: Local Recipes to Try

Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 cups red wine (preferably Burgundy)
  • 200g lardons or diced bacon
  • 250g pearl onions
  • 250g mushrooms, quartered
  • 2 cloves garlic, minced
  • Thyme, bay leaves, and parsley
  • Salt and pepper to taste

Instructions:

  1. In a large pot, cook the lardons until crisp. Remove them and set aside.
  2. Add the chicken pieces to the same pot and brown them on all sides.
  3. Stir in the pearl onions, mushrooms, and garlic; cook until soft.
  4. Return the lardons to the pot and pour in the red wine.
  5. Add thyme, bay leaves, and parsley. Season with salt and pepper.
  6. Cover and simmer for about 1.5 hours, until the chicken is tender.

2. Ratatouille

This colorful vegetable medley originates from Provence and showcases the bounty of summer produce. Ratatouille is not only a side dish but can also be served as a main with crusty bread.

Ingredients:

  • 1 zucchini, diced
  • 1 eggplant, diced
  • 1 bell pepper, diced
  • 2 tomatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Fresh basil, thyme, and rosemary
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, heat olive oil and sauté the onion and garlic until translucent.
  2. Add the bell pepper, followed by the eggplant, zucchini, and tomatoes, stirring to combine.
  3. Season with herbs, salt, and pepper. Cover and let it simmer for approximately 30 minutes, stirring occasionally.

3. Tarte Tatin

This upside-down caramelized apple tart is a delight that originated in the Loire Valley. The simplicity of this dessert highlights the sweetness of the apples and the flaky pastry.

Ingredients:

  • 6 apples (preferably Braeburn or Granny Smith)
  • 100g unsalted butter
  • 150g sugar
  • 1 sheet puff pastry
  • Vanilla ice cream for serving (optional)

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. Peel and core the apples, then cut them in half.
  3. In an ovenproof skillet, melt the butter and sugar over medium heat until it caramelizes.
  4. Arrange the apple halves in the skillet, cut side up. Cook for 10 minutes.
  5. Roll out the puff pastry and place it over the apples, tucking the edges down into the skillet.
  6. Bake for 25-30 minutes, until the pastry is golden. Allow to cool slightly, then invert onto a plate. Serve with vanilla ice cream.
